Peanut Butter & Jelly Hand Pies

I'm a little behind, but I think it's better late than never ;).
I made these hand pies over the summer, and couldn't help but consider them to be great additions to any lunchbox or an afterschool snack. Pie season is upon us, and if you have any leftover pie crust dough (or if you'd like to try out my favorite recipe), consider the recipe below:

Filling: your nut butter and jam of choice
egg wash

1. Roll the pie crust out to 1/8" thick. Cut out shapes
2. Add a dollop of nut butter and jam to one piece of pie crust
3. Brush the edge of the pie crust with egg wash
4. Top with another piece of pie crust or fold the pie crust over itself (like a calzone)
5. Crimp the edges with a fork.
6. Repeat with remaining pieces of dough
7. Freeze the assembled hand pies for 10 minutes.
8. Brush the tops of the hand pies with leftover egg wash
9. Bake at 400*F for 20-25 minutes, or until golden brown.
