Carrot Cake Bites

 Who says dessert can't be healthy?








Recipe: Carrot Cake Bites

2-3 small carrots, shredded
1/2 cup of fresh dates, soaked in warm water
1/4 cup of walnuts
1/4 cup of shredded, unsweetened coconut
2 tsp cinnamon

(opt) extra coconut to roll the carrot cake bites in

1. Add the walnuts, cinnamon, and coconut to a food processor.
2. Pulse until the walnuts are broken into crumbs.
3. Add the carrots and dates (reserve the water that they were soaking in).
4. Pulse until the mixture comes together (add some of the water as necessary to bring the mixture together)
5. Scoop out tablespoon-sized bites, roll into balls, and (if desired) roll in coconut.
6. Refrigerate for at least 30 minutes before serving (if you can wait that long)!
