"Reverse" Zucchini Pasta

One method that a lot of parents use to get their kids to eat their vegetables is to incorporate the vegetables into dishes, like mixing chopped zucchini and mushrooms into pasta sauce. I reversed this method, by mixing pasta into pasta sauce served over zucchini pasta. If you don't have a spiralizer handy, simply use a vegetable peeler to peel thin strips of zucchini and cut the strips in half. 

I'm using brown rice pasta that we got from our Wegman's scavenger hunt; it came in different shapes like bicycles and cars ;) 

Recipe: "Reverse" Zucchini Pasta

1 zucchini, spiralized/peeled into thin noodles/strips
3 mushrooms, washed and chopped
olive oil, to cook with
1/3 cup of marinara sauce
1/4 cup of dry pasta (gluten-free, if you want), cooked

salt & pepper, to taste


1. Heat up some olive oil in a small pan, and saute the mushrooms and zucchini noodles until the mushrooms are fully cooked and the zucchini has softened. Season with salt & pepper, to taste.
2. Place the zucchini noodles on a plate.
3. Mix the cooked pasta with the mushrooms and marinara sauce.
4. Top the zucchini noodles with the pasta/mushroom sauce.
