Miso Stir-Fry

I'm not sure why I've been cooking foods as opposed to eating colder foods, especially with this summer heat, but I'm not complaining because it's comforting. This recipe, in particular, takes very little time to cook, and uses a concentrated miso soup for flavor --- healthy and easy.

Recipe: Miso Stir-Fry

1 cup of sliced cabbage
1/2 bell pepper, thinly sliced
1/2 onion (or 1 small one), thinly sliced
1 teaspoon of fresh thyme
olive oil, to cook with
salt & black pepper, to taste

1 teaspoon of miso paste (I used low-sodium)
1/3 cup of water (warm water is best)


1. Heat a pan (with olive oil).
2. Add the onions and bell peppers and cook until the onions are nearly golden brown.
3. Add the cabbage and cook until softened.
4. Add the thyme, salt, and pepper, to taste.
5. Mix the miso with some water, and add to the pan of vegetables.
6. Cook for another 30 seconds to reduce the stock, and transfer to a plate/bowl.
