Ginger-Lime Quinoa Salad


i went to home depot by myself for the second time the other day, and once again, I found myself wandering the aisles, reaping the judgement of the employees and random customers (note to self: don't wear a dress when you walk into home depot). I really want to consistently post high quality photos, so I went to home depot to get a tile and a wooden board as backgrounds. prices always vary, but according to other bloggers, this is probably one of the easiest and cheapest ways to amp up your photos (the wooden board cost about $5 and the tile cost $2). 

aside from the inexpensive backgrounds, this recipe is relatively inexpensive to make as well because everything is in season. when bought in bulk, avocados, quinoa, carrots, and bell peppers are much more reasonably priced and can easily be stretched over several meals. this meal, in particular, can generously serve 2, but would be a great appetizer for 3-4 people.











Recipe: Ginger-Lime Quinoa Salad

1 cup of water
1/2 cup of quinoa

1/2 bell pepper, thinly sliced then chopped
1 cup of broccoli, cooked and chopped
1 avocado, diced
1 carrot, shredded
3 tablespoons of chopped scallions/green onions
(opt) black sesame seeds, to garnish

dressing:
juice of 1 lime
1 inch piece of ginger, grated
(opt) 1 teaspoon of honey, melted

1. Bring the water to a boil. Add the quinoa, cover the pot, and let the quinoa cook until there are little ringlets around the seed.
2. Mix the dressing ingredients together in a small bowl.
3. When the quinoa is fully cooked, toss it with all of the other ingredients in a large bowl. Drizzle in the dressing and toss thoroughly to coat.
4. (opt) refrigerate overnight for more flavor (you can still eat this right away!)
