Summer Shrimp Salad

Salads do not have to be boring, and here's one of the least boring salads I've ever made :)


Recipe: Summer Shrimp Salad

1 cup of spinach (i like to chop it)
handful of grapes, halved
1/2 zucchini, quartered
3-5 pieces of shrimp (as many as you'd like), peeled/deveined/boiled or pan fried
1 tablespoon of sundried tomatoes (with the oil it's packed in)
salt/pepper

::::::::::::::::::::::::::::::::::::::::

1. Cook the zucchini quarters on medium heat until barely golden brown. Season with salt/pepper if desired
2. Toss the spinach with the sundried tomatoes/oil. 
3. Mix in the other ingredients (add extra salt/pepper if needed, but I think the sundried tomatoes add enough flavor!)
