Salmon Salad


Leftover fish tends to not taste as good as their fresh counterparts, but I've realized a key thing that changes the way I look at leftover salmon: cold leftovers are better than re-heated leftovers! So I tossed cold salmon with a few salad ingredients to make this healthy, not-boring salad :)


Recipe: Salmon Salad

1 cup of cabbage, shredded
1/2 cup of broccoli, cooked
1/2 an avocado, chopped
handful of macadamia nuts, chopped
handful of dried cherries, chopped
1/4 cup of cold, leftover salmon, flaked with a fork
1 tablespoon of apple cider vinegar

1. Toss the cabbage and broccoli with the apple cider vinegar. 
2. Add the remaining ingredients and enjoy!
