Asian Slaw with an Orange-Miso Dressing

Here's a refreshing summer salad that's easy to prepare and can be made ahead of time!

Recipe: Asian Slaw with an Orange-Miso Dressing

1/2 head of cabbage, washed and thinly sliced
2 carrots, peeled and thinly sliced*
1 cup of corn (use fresh or frozen)
2 oranges, sliced
1 avocado, chopped
handful of cashews
a few dried seaweed/nori sheets, sliced

for the dressing:
1/4 cup of orange juice
1 tablespoon of miso paste
2 tablespoons of rice vinegar or apple cider vinegar


1. Mix all of the ingredients for the dressing in a small bowl. 
2. Use your hands to massage the dressing into the cabbage and carrots(this helps to soften up the cabbage)
3. Toss in the rest of the ingredients and serve :)
