Sesame Miso Vegetable Bowl




Notice anything different? Well, in my attempts to improve this blog, I'm trying to work on my food styling skills ;)

This recipe is a grain-free take on typical Asian flavors; it's filling, easy to prepare, and it looks/tastes really good!








Recipe: Sesame Miso Vegetable Bowl

1/2 cup of broccoli, cut into smaller pieces
1 small carrot, peeled
1 red bell pepper, thinly sliced
1/2 avocado, chopped
sesame seeds, to garnish

dressing:
1 tablespoon of miso paste (I used low-sodium, organic)
2 tablespoons of rice wine vinegar
1 teaspoon of sesame oil
(furikake, to garnish)

1. Cook the broccoli (steam or boil) until fork tender but still has a bite.*
2. Cut the carrot lengthwise in half, and then width-wise in half. 
3. Use a vegetable peeler to peel long, thin strips of carrot (or you can grate the carrot)
4. Mix the dressing ingredients together. 
5. Toss the vegetables in the dressing and top with sesame seeds.
