Sesame Kale Salad

I'm not one of those people who you'd catch wearing a sweater with "Kale" written on it (ahem..Beyonce). Now it read "Peanut Butter", then I'd be wearing that all the time ;)

Kale really isn't my favorite vegetable, but I do eat it almost everyday. It's my go-to leafy green for any salad because it's a) inexpensive, b) a "superfood" (nutritionally superior than regular iceberg lettuce), and c) long-lasting (unlike spinach). The only downside to kale is that it's extremely dry and hard, but there's a simple trick to making it more palatable: using your hands to massage/rub in the dressing. Sounds weird and is messy, but it makes a difference.

Recipe: Sesame Kale Salad

handful of kale, rinsed and chopped thinly
1/4 cup of frozen edamame, cooked
1/2 red bell pepper, chopped
1-2 tbsp of sesame seeds

1 tablespoon of  rice vinegar or Apple Cider Vinegar
1 tablespoon of tahini
1-2 tsp of orange juice
1 tablespoon of sesame oil


1. Mix the dressing ingredients together in a small bowl. Add warm water if necessary to loosen the tahini.
2. In a large bowl, pour your desired amount of dressing over the kale. With your hands, massage the dressing into the kale for at least 30 seconds, or until the kale starts to wilt.
3. Toss in the other ingredients and serve ;)
