Paleo Omelette Wrap



i literally just ate this twenty minutes ago :) and i'm really wishing i could go back in time and eat it again!

this is a great recipe and can easily be wrapped up for school; i overfilled mine (naturally) so it got a little messy, but hey, it's all good.
you're getting all of your greens right in the morning without having to drink a cold green juice (not the most desirable thing when it's 15*F outside); to speed up this process, pre-cut all of your veggies the night before and all you have to do is cook the eggs (takes less than 1 minute each) and assemble!










Recipe: Paleo Omelette Wrap

1 egg & 1 egg white, whisked well
1/2 avocado, sliced
1/4 bell pepper, sliced and/or chopped
1 mushroom, sliced thinly
2 spring/green onions
mixed greens

little bit of oil
(opt:) ketchup

1, Add a little bit of warm water to a small saute pan and cook the mushroom slices (i also cooked 1/2 of the bell peppers). Set aside.
2. Add a little bit of oil and add half of the egg. Tilt the pan around to spread the egg evenly and cook until both sides are fully cooked.
3. Repeat with the other half of the eggs
4. Add the toppings to the omelette "wrap" and use the spring onions to tie the wraps & hold them in place (i cheated and used a toothpick!)






you know i ate it with ketchup ;)
