Coconut Tofu Curry (Vegan & Gluten-Free)

Combine the Singapore Mai Fun recipe with the homemade coconut milk recipe and BAM you've got curry in less than 1/2 hr!

Recipe: Coconut Tofu Curry

1 onion, minced
entire batch of yellow curry paste (about 1/2 cup)
2 cups of coconut milk
1/2 cup of coconut cream
1 cup of mushrooms, chopped
1-2 cups of broccoli, chopped
1 cup of frozen peas
1 block of soft tofu (not silken), chopped
(opt) extra turmeric powder, for color


1. Saute the onions in a large soup pot until softened.
2. Add the curry paste and cook for 30 seconds.
3. Add the coconut milk, coconut cream, broccoli, and mushrooms. Cook for 10-20 minutes, or until the broccoli has softened.
4. Add the peas and tofu; cook until they have warmed through.
5. Serve with Singapore Mai Fun :)
