Coconut Cashew Crusted Tilapia

This was rated 9.5 from my brother...out of ten...that's pretty good ;)
Served up with some coconut tofu curry and homemade korean bbq sauce and you've got yourself a pretty awesome dinner.
or, make some homemade coconut milk and serve this with coconut jasmine rice (planning to do that for my brother's birthday!)

Recipe: Coconut Cashew Crusted Tilapia

3 tilapia fillets (defrosted)
1/4 cup of cashews
1/2 cup of unsweetened coconut flakes
1/2 tsp salt
pepper, to taste
1/2 lime


1. Place oven rack on second rack spot from the top (not the top one because the crust will cook too fast and burn)
2. Set the oven to broil (high) and start prepping the fish.
3. Blitz the cashews in the food processor until they start to look like bread crumbs. Add the coconut, salt, and pepper, and blitz again to mix.
4. Place the crumb mixture on a shallow dish and coat the fish with the crumb mixture on both sides.
5. Repeat with the other fillets and place on a greased baking sheet.
6. Broil for about 3 minutes on the first side, or until golden brown and opaque.
7. Flip and broil the other side for about 3-4 minutes, or until the fish flakes easily with a fork.
8. Top with korean bbq sauce and squeeze the lime juice onto the fish. (You can broil for another minute if desired to warm the sauce up, but that's optional)

*Trust me, this fish cooks FAST! I was a bit skeptical when I compared other recipes and found that they all had very short cooking times, but it's true! Just keep an eye on it because you don't want the crust to burn.
