Zucchini Vermicelli Vietnamese Spring Rolls

more vietnamese spring roll recipes?!

i know vermicelli is much thinner than what's shown here, but this is just a fun substitution ;)

Recipe: Zucchini Vermicelli Vietnamese Spring Rolls

1 zucchini, spiralized
1 carrot, cut into matchsticks
1/2 avocado, sliced

3 rice paper wrappers
plate & warm water

1 tablespoon ponzu
1 tablespoon sesame oil
1 tablespoon rice vinegar


1. Soften the rice paper wrappers in the warm water
2. Place the softened rice paper wrapper on a flat surface and begin adding the fillings
3. Wrap like a burrito and repeat :)
4. Mix the last three ingredients for a sauce
