Matcha Coconut "Macaroons"



first day back at school....ew.

but let's focus on the positive:
        1. i got to see all of my favorite teachers today
        2. not being able to play viola and participate in gym allows me to have a max. of 3 study halls (which i was the case today)

lucky for me with those study halls, because i was flooded with work to do. since i was able to get a decent chunk of work done at school, i was able to work out, something that i definitely made time for over break. exercising seriously helps to relieve pressure and stress.

and right before i worked out, i had these "macaroons"!

i found this recipe on instagram, and although a) they don't taste like macaroons and b) they don't really look like macaroons, they taste pretty good...

i made some plain and some with matcha powder, and honestly, the matcha ones taste SO MUCH BETTER ;) (not that the plain ones don't taste good, but...come on, the matcha powder truly guarantees a definite green tea flavor that's not over the top but not hidden either)










Recipe: Matcha Coconut "Macaroons"

10-12 dates, pitted
1 cup of warm water
1/3 cup of oats
1/3 cup of almonds, grounded into almond meal (or sub another 1/3 cup of oats)
1 cup of unsweetened coconut flakes (plus more for coating)
1 tsp of matcha powder

::::::::::::::::::::::::::::::

1. Soak the dates in the water for at least 15-20 minutes.
2. Blend the dates and water in a food processor until creamy.
3. Mix all of the ingredients together in a large bowl.
4. Form little macaroon balls using 2 spoons/a mini ice cream scoop
5. Coat the macaroon balls with the extra coconut.
6. Let them set in the fridge for at least 30 minutes



Let's try to really focus on the positive.
Going back to school/work after a long break is never easy, but we don't have to make it even 
harder by dwelling on the negative.
