Crunchy Mango Avocado Vietnamese Spring Roll

this is definitely not the first time i've shared a vietnamese spring/summer roll recipe here on my blog, but these are just so good that i have to keep posting different variations! the key is to just use leftovers; i love the traditional ones but i rarely make those because those require planning and this recipe doesn't really need that --- just use whatever you have in the fridge and wrap it all up!

Recipe: Crunchy Mango Avocado Vietnamese Spring Roll

2 rice paper wrappers
shallow plate & warm water

1/2 avocado, sliced
1/2 mango, sliced into matchsticks
1/2 zucchini, sliced into matchsticks
(opt: ---i didn't have these on hand) tofu, shredded lettuce, bean sprouts

1 tablespoon bbq sauce
1 tablespoon apple cider vinegar
1 tablespoon lime juice
1 tablespoon sesame oil


1. Soften a rice paper wrapper by soaking it in the shallow plate filled with warm water until pliable
2. Remove the wrapper and place on a plate or cutting board
3. Add your desired fillings
4. Wrap like a burrito
5. Mix the sauce ingredients in a small dish
