Waffle Hash Browns & Christmas Morning Breakfast

i hope you enjoyed your Christmas day ;)
I made breakfast Christmas morning, consisting of the following foods & my vegan hot chocolate ;) 

i also made a marshmallow shooter for my brother as a gift, and here's his reaction: 



fruit salad: pineapple, papaya, grapes, orange slices

(you know, just wishing we were in the tropics or something for Christmas)


scrambled eggs with peas and sundried tomatoes

(you bet i had lots of ketchup with this and the potatoes)


bread machine bread  for the family (with herbs like basil, anise seed, oregano, rosemary)



Recipe: Waffle Hash Browns

potatoes, peeled and shredded
water
oil
salt/pepper/spices

paper towel/kitchen towels (or potato ricer if you have one)
waffle iron

:::::::::::::

1. Soak the shredded potatoes in cold water to release the starch for about 5 minutes
2. Use paper/kitchen towels or a potato ricer to squeeze out the water from the shredded potatoes
(they should feel like coconut flakes ---yup, that dry!)
3. Preheat your waffle iron according to the manufacturer's directions. 
4. Drizzle oil over the waffle iron (be careful, the oil may bounce back) and add the potatoes.
5. Cook for about 5 minutes on each side; ignore when the waffle iron starts to beep because you're not making waffles ;)
Check on the hash browns periodically and flip over to ensure even coloring (if that's an issue)!


and my brother made my mom some "silver roses" (tin foil but they did look really nice) and my dad a mouse ;D
he cracks me up
