Vegan Peanut Butter Cups

today, i was a zombie. 
i still feel like one.
while the rest of the world was alive, 
i was just there, wishing to be alive.
wishing to just go home.
wishing it was winter break already.

insomnia is no fun, and neither is anxiety.
i had awful insomnia for over a year starting my sophomore year in high school,
and i thought i had gotten over it this past summer,
but it's back.
just in time, huh?

people tell me to relax and to not worry,
but how can i not?
there's no switch to turn off.
i can't help it.
just like how i can't help but feel envious/depressed/frustrated and even happy
even though i want to be just purely happy when the people around me get into their dream schools.

so apparently there's a slang word, "salty", that's pretty much synonymous with bitter.
that's me. 
but i don't want to be bitter, so i try not to be.
but it's an instinct.
i can't help it. 
just like how i can't help my restlessness and inability to get good sleep.

so the zombie is forced to keep being a zombie, until her big break comes and she is restored with life.
for now, this zombie resorts to vegan peanut butter cups as a temporary solution for vitality:

Recipe: Vegan Peanut Butter Cups

1/4 cup cocoa powder
1/4 cup coconut oil
1/4 cup maple syrup/agave nectar/honey*
peanut butter

*(i'm not a vegan but i can't have dairy, so i prefer honey because it adds a sophisticated level of flavor to the chocolate)


1. Melt the coconut oil (and honey if necessary).
2. Mix in the cocoa powder and sweetener (if you haven't already), and stir until smooth.
3. Fill a mold (you don't have to, you can use muffin liners or just make a giant reeses bar and pour into a lunch box or something)
about 1/3 of the way full.
4. Place in the freezer for about 15-25 minutes to set up. Set the rest aside.
5. Take the mold out of the freezer and place a small dollop of peanut butter in each one. Fill the remaining space up with the leftover chocolate mixture.
6. Let it set in the freezer for another 30 minutes.
