Coconut Meltaway Shortbread Cookies


merry christmas everyone ;)
i hope you had (or are having) a super great day regardless of what you did.
right now, i'm sitting down, eating these cookies/apples & a banana with pb, because i'm absolutely exhausted!

so if you're not sick of christmas cookies yet, try this recipe (gluten free & vegan)! it's a breeze to make and 
even my friends at school loved it (one in particular could not believe that it's vegan ;) !

*this is a twist on my other shortbread cookie recipe! it's a lot sweeter but it also tastes a lot better ;) 






Recipe: Coconut Meltaway Shortbread Cookies

1/2 cup of powdered sugar
1/2 cup of tapioca flour or cornstarch
2 cups of rice flour
1/2 cup of coconut oil (solid)

1. Beat the coconut oil until it's a bit creamier (about a minute)
2. Add the other ingredients and continue blending until you achieve pea-sized crumbs
3. Knead the cookie dough with your finger tips and form a square (pack in the dough well! it'll be very crumbly)
4. Cut into squares and place on a baking sheet.
5. Bake at 300*F for about 20-30 minutes, or until the bottom just barely begins to turn golden (it won't change very much in color!)
