Baked Pineapple Fried Brown Rice

Recipe: Baked Pineapple Fried Brown Rice

2 cups of leftover brown rice*
1 cup of pineapple chunks
1/2-1 cup of frozen edamame, cooked
1/2 cup of chopped cashews and/or peanuts
1/2 onion, minced
1 large scallion, chopped
2" piece of ginger, grated
1-2 tablespoons of sesame seeds

3-4 tablespoons of ponzu (pretty much gluten-free soy sauce)
juice of 1/2 lime
2 tablespoons of sesame oil


1. Toss all of the ingredients together in a large bowl
2. Spread the fried rice mixture evenly on a rimmed baking sheet**
3. Bake at 325*F for about 45-60 minutes, stirring every 15-20 minutes.

*the brown rice i used was left overnight in the rice cooker, not in the fridge, which did not help the texture! try to get cold leftover rice
**i didn't spread the rice out which did not help the fried rice achieve the "fried" texture, so do take the effort to spread everything out into an even layer
