Turkey Chili (Without Any Canned Ingredients)

My brother loves chili, and it's such an easy thing to make.
His ideal chili does not have any onions, peppers, or any "kicks" (aka spicy peppers), so I took those things into consideration, and whipped up a "healthier" version of chili that isn't made of any canned tomatoes/beans!

Recipe: Turkey Chili

1.5 cups of black beans
3 cups of water
1.5 cups of pinto beans, cooked 
3 cups of water

2-3 cloves of garlic, minced
1/4 lb of ground turkey
2.5 cups of tomatoes, chopped
1 cup of mushrooms, chopped
1 cup of frozen corn
2-3 cups of vegetable stock (low sodium is best)

black pepper, salt, paprika


1. Cook the beans in separate pots until softened.
2. Reserve the stock from the pinto beans but drain the black beans.
3. Heat up some oil in a large pot.
4. Add the garlic and the turkey. Use a wooden spoon and break up the turkey into chunks.
5. Add some seasoning to the turkey.
6. Once the turkey is nearly fully cooked, add the mushrooms. Cook for 2-3 minutes.
7. Add the rest of the ingredients and enough vegetable stock to just cover the entire mixture.
8. Bring to a boil and then simmer for about 30-45 minutes (or until it's reached your desired thickness).
