Thai Cabbage Salad

 

I'm not Thai, and I didn't go for the coconut cream/chile/peanut flavor profile or this salad. I just went with what came to mind when I thought "Thai salad": cashews, lime, pepper (bell), ginger, scallions.

The grapefruit was just added for a pop of color and freshness ;)



Recipe: Thai Cabbage Salad

1/2 cup of shiitake mushrooms, sliced
1/3 cup of scallions
1/2 cup of bell pepper slices
1 inch of ginger, sliced thinly
handful of roasted, unsalted cashews
1 grapefruit, sliced
2-3 cups of shredded cabbage

1 tablespoon of miso paste
juice of 1/2 lime
drizzle of sesame oil

1. In a pan heating with oil, sautee the ginger and scallions for 1/2 minute.
2. Add the mushrooms and bell peppers. Cook until the mushrooms have softened.
3. Mix the last three ingredients to make a dressing.
4. Toss all of the ingredients in a large bowl with the dressing.
