Pumpkin Butter and Peanut Butter Thumbprint Cookies

i had THE BIGGEST cravings for cookies, and i recently made some pumpkin butter....and i had a craving for peanut butter too....
everything just fit together like puzzle pieces ;)

of course, given that intense craving, i ate nearly ten the first day. whoops. 
no worries, i ran this morning...
but OH MAN peanut butter and pumpkin butter taste good together.

to be honest, the dough for these cookies isn't the greatest since i always try to add less sugar, so add an extra  1/4-1/2 cup of brown sugar if you're okay with having more sugar. (the original recipe that this recipe is based off of asked for 2/3 cup and i only used 1/4)

these thumbprint cookies are so stinking cute, and the best part of all is that you can do whatever you want with the cookies. the original recipe was for a chocolate chip cookie, but i just jammed my thumb in there and filled the little wells. get creative with the fillings: use jams, cookie butter/speculoos, apple butter, nut butters, coconut flakes, nutella, or even add cream cheese to make it savory.

Recipe: Thumbprint Cookies

Based off of Ambitious Kitchen's recipe for Salted Oatmeal Dark Choc. Chunk Cookies

2.5 cups oats, blended to make oat flour
1 tsp baking soda
1/4 cup of brown sugar
1/2 cup of coconut oil, melted
1 egg

peanut butter


1. Preheat the oven to 350*F
2. Mix all of the ingredients together
3. Portion out the cookies using an ice cream scoop
4. Make a well in each cookie with your thumb and fill each well with your desired fillings
5. Bake for 10-12 minutes 

i made some with BOTH peanut butter & pumpkin butter.....those were the best ;)
