Coconut Pumpkin Butter Power Bites



i was watching @missglamorazzi's last video, and she made this pumpkin power bites and i was inspired to make my spin of her recipe.
instead of using pumpkin seeds, i used sunflower. instead of adding craisens (i feel like all those dates would make it way too sweet already) i added coconut chips for more texture. instead of adding pumpkin puree, i added pumpkin butter. and then as always, i included the peanut butter.

yeah...i nearly finished the entire jar...and i was consciously trying to be aware of how much i ate...and it's only been four days.
I NEED HELP.
and you might need help after you try making these, because they are SO GOOD. (i ate five yesterday. yup. five.)


Recipe: Coconut Pumpkin Butter Power Bites

(adapted from @missglamorazzi's recipe)

for the paste:
1 cup dates, pitted
1 tsp cinnamon
1 tablespoon peanut butter
3 tablespoons of pumpkin butter
1 tablespoon of chia seeds
1 tsp salt

mix-ins:
1/2 cup of coconut chips
1 cup of oats
1/2 cup of sunflower seeds

1. Blend all of the ingredients for the paste in a food processor until it becomes a smooth and creamy paste.
2. Transfer the paste to a bowl and fold in all of the mix-ins.
3. Shape into balls and refrigerate for about 30 minutes (if you can wait that long)

***Get creative with the mix ins! Throw in some nuts if you want! I was even considering of adding gluten free pretzels and chips for a sweet & salty combo but then again...they take away from the "healthy" aspect of this recipe...so i didn't...





i'm still looking for a substitute for the dates; both my brother and my mom requested to decrease the amount of dates :/
any suggestions?
