Oatmeal Pancakes (Success!)

sometimes life gives you lemons. and then you get mad. but then it gives you even more lemons. then you don't have so much time or energy to waste on being mad. that's when i appreciate those lemons. except sometimes when those lemons is a swarm of wasps and hornets (yup, both) that are flying around your house. that's when you get a little mad again. 

on the bright side, I've finally finally finally managed to make pancakes (that tasted good and looked good) out of oat flour!
super simple, easy, and quick :)

Recipe: Oatmeal Pancakes

1 cup of oats, blended in flour (blender is better than food processor for this)
1 teaspoon of baking powder
1 cup of almond milk
1 egg
a few tablespoons of coconut oil for cooking
(opt toppings: bananas, walnuts, cacao nibs/chocolate chips, berries...)


1. Mix the first four ingredients together.
2. Heat up a pan on the stovetop, (NONSTICK PLEASE), add a tablespoon of coconut oil, and wait until the pan gets hot.
(you know it's hot when you can flick drops of water and they start to dance)
3. Add your pancake batter 
4. When the bottom turns golden brown, (peek underneath to check), and can be easily flipped, FLIP :)
5. Cook for another minute or so, and enjoy!

Pancake Batter Variation ideas/Mix-Ins : 
-pumpkin spice (cause everything's pumpkin spice this time of year)
-blueberry banana
-banana chocolate chip
-spiced chai
-strawberry banana
-cinnamon apple
