Avocado Baked Egg and Orange Salad

I've seen this on Instagram, Pinterest, and other blogs, and it always looked like such a pretty brunch dish. 
I'm a big big big fan of avocados (typically eat 1/2 a day), but I had never tried them cooked.
The verdict? 
Yeah, they look pretty. Meh, they don't taste that great. 
It's all because of the warm avocado for me, but then again, I had a head cold and couldn't taste the spices that well. But the warm avocado had a slight bitter aftertaste...

so anyways, this recipe isn't for people who like warm avocados, but if anyone's interested in this recipe or is just curious, read on ;)

Recipe: Avocado Baked Egg

1 avocado, sliced in half and pitted
1 or 2 eggs (i used 1 egg and split the egg whites)
spices: salt, pepper, paprika, etc.
herbs: scallions, parsley, chives, basil, etc.
opt: smoked salmon, bacon, sundried tomatoes, mushrooms, salsa, etc.


1. Preheat the oven to 450*F.
2. Scoop out some of the flesh of the avocado (mine was quite mushy and had several brown spots so I just scooped those parts out); enough so that there's room for the egg(s).
3. Either add some smoked salmon/optional toppings to the avocado or immediately crack an egg in a separate bowl and add to the avocado.
4. Repeat process with egg if desired or garnish the egg with spices/herbs/optional ingredients.
5. Bake for 15-20 minutes or until the egg is set to your liking.

Recipe: Orange Salad

1 cup of spinach, chopped
handful of craisens
a few acorn squash/pumpkin seeds (any seed will do)
orange slices/clementine slices


1. Toss all the ingredients together and enjoy!
