Portobello Mushroom "Steak"

we're headed off to New England in 1.5 hours! i'll be vlogging this trip, so check out my channel for vlogs ;)

here's a quick & simple vegan/gluten free/sugar conscious recipe for a marinated portobello mushroom "steak" ;) serve it as a burger, on top of a salad, or with a side of loose corn (wizards of waverly place, anyone?) & mashed potatoes.

Recipe: Portobello Mushroom "Steak"
By: Hannah Claudia

5 portobello mushrooms
2 tablespoons of barbecue sauce ( i used an organic one that is naturally very low in sugar --from Wegman's)
2 tablespoons of apple cider vinegar
2 tablespoons of sesame oil
1 tablespoon of olive oil
1-2 tablespoons of water

1. Wash the mushrooms
2. Prep the marinade (the rest of the ingredients) in a marinating dish & transfer the mushrooms to the dish
3. Let the mushrooms marinate for at least 6 hours (i like to do it overnight)
4. If you have a grill, you can grill the mushrooms.
I don't have one, so I baked the mushrooms for about 15-20 min. in an oven at 400*F.
(Tip: if baking, place the mushrooms on a cooling rack with a baking sheet underneath to catch any of the juices)
5. (opt) I caramelized some onions and poured any leftover marinade (and leftover juices from the mushrooms) on the onions.

served this on top of the onions and a salad mixed with my take on a Japanese carrot ginger dressing

get ready for some photos of our trip ;)

xoxo, hannah
