Granola Bar "Ice Cream Sandwich"


This isn't the most attractive plate of food, but it's really really addicting. I think I've mentioned it before that I'm completely addicted to oats: granola, oatmeal, cereal, granola bars....all that stuff is just so addicting.

My family is traveling for a week (starting tomorrow), so I wanted to use up the box of fresh medjool dates in my fridge. I was going to make these "cookie dough" bites that I made the week before, but I altered the recipe slightly and it turned out even better!

This is a vegan & gluten-free treat that's naturally sweetened (so sugar conscious) that is really healthy but is higher in calories because dates are packed with so much natural sugar , but it's exponentially better than generic granola bars/ice cream sandwiches from the supermarket.

Recipe: Granola Bar "Ice Cream Sandwich"

1.5 cups of rolled oats, soaked (i soaked mine for 4 hours to release the phytic acid and to soften them since we won't be cooking them)
1.5 cups of pitted dates
(opt mix ins: coconut flakes, cacao nibs, nuts) ---i don't recommend adding anything else that's too sweet since the base will already be super sweet and sticky

1. Drain the soaked oats & squeeze out as much water as possible
2. In a food processor, blitz the dates and oats until blended & represents a cookie dough consistency
3. Mix in the additional ingredients
4. Line a container with cling wrap and pour the mixture into the container. Freeze for at least 30 minutes to let everything set up (it's too sticky if you try to eat it immediately but hey, it still tastes amazing ;) )



It's cold and creamy like ice cream, but at the same time, it has the soft cookie texture of an old-fashioned ice cream sandwich cookie !
