Garden Quinoa Salad


just got back from an awesome (and surprisingly physically tiring) bike ride. The weather here is absolutely beautiful; it's the perfect summer weather (it's warm but not overly humid with a breeze) and the sky has just the right balance between clouds and blue.

and now i'm eating an awesome Vietnamese/Japanese-Italian/Mexican salad (lettuce, basil, mint, carrot-ginger dressing, sundried tomatoes, and organic tortilla chips) while re-watching one of my favorite Chicago Fire episodes ("A Dark Day"---inspired by the Boston Marathon bombing). And last night, I played with my afterschool chamber group at a BEAUTIFUL outdoor wedding at a farm (it was definitely one of those pinterest rustic outdoor weddings) where I fed a camel. AWESOME. Now this is what my definition of a good summer is, but too bad it's coming to an end.

This salad, however, embodies a ton of fresh summer foods & flavors that can help us savor the last few days of summer ;)



Recipe: Garden Quinoa Salad

1 nectarine, chopped
1 cup of lettuce, chopped
1/4 cup of chickpeas, cooked
1-2 tablespoons of sundried tomatoes, chopped
1/2 avocado, chopped
1 tomato, chopped ( i used a green tomato that fell too early from our backyard garden)
1/4 cup of chopped basil and mint
1/4 cup of cooked quinoa

1. Toss it all together (with your favorite dressing if desired or some lemon juice, I used my carrot ginger dressing)
