Date Butter & Celery



Wait...isn't it "peanut butter & celery" ?

Well, for someone who is ADDICTED to peanut butter and trying to cut it off, date butter is an awesome substitute.
Date butter is simple to make and can be customized to suit your own tastes; add some cayenne for a little kick, add some cocoa powder for chocolate-y goodness, or even some salt for a "salted caramel" flavor. Best of all, dates are VERY sweet (naturally), and it's almost like eating a ton of frosting in one spoonful --- you can't overeat because you won't really want to.

Celery is a great source of natural sodium, so the sweet date butter complements the savory celery well, for the perfect sweet & salty taste profile (think chocolate and pretzels).


Recipe: Date Butter

as many pitted medjool dates as you'd like
hot water (enough to just cover the dates)
optional mix ins: salt, cayenne, cocoa powder...

1. Soak the dates in the hot water for about 20 minutes
2. Drain the water (if the water is syrupy/sweet, you can save it and use it as a natural sweetener for your coffee/teas)
3. Blend the dates in a food processor until creamy (add a little bit of the water if it's not blending well)





enjoy ;) this will be a great afterschool  snack too! Anyone back in school yet? I've got less than a week now until my senior year officially starts...where did the summer go?!
