Creamy Chickpea Salad

over the past couple of days, I've been doing some fashion photo shoots (i'm the photographer NOT the model lol let's be real here) and I've been multi-tasking between picking outfits/taking photos/eating lunch, and here's one memorable lunch that I had the other day :)

for the record, home-grown/organic zucchini slices taste REALLY good with Wegman's organic BBQ sauce (lower in sugar compared to most bbq sauces too and made with real sugar NOT fructose corn syrup)

anybody else obsessed with chickpeas? they're quite rich and high in calories, but they're a great source of protein (especially for people who need alternative sources of protein like me). this salad uses about 1 cup of chickpeas so it's a recipe that's going to be higher in calories, but it'll keep you full for a very long time and again, calories really don't matter as much if you're just eating whole, natural foods.

these half-ripe tomatoes from our backyard too are super juicy (not overly sweet and not sour) without the annoying juice spilling traits of normal tomatoes you get from the supermarket when you slice into them!

Recipe: Creamy Chickpea Salad

1 cup of chickpeas, cooked
1/4 cup of basil, chopped
1/2 tomato, chopped (i like half-ripe tomatoes)
1/2 avocado, chopped
(opt: lemon juice, salt/pepper)


1. Toss all of the ingredients together
