Spinach-Watermelon Salad

just got wisdom teeth surgery and i am feeling numb. lol. i accidentally bit the nurse afterwards; he changed the gauze for me and then told me to bite so I did, but apparently he didn't remove his finger from my mouth (my mouth is numb, how was i supposed to know?) lol so i bit him xD i feel so bad lol

so for the past couple of days, i've been LOVING this salad; i switch things up sometimes by adding apple chunks instead of watermelon and i play around with the dressings. i'm kinda sad cause i can't eat it for a couple days but at least i ate a ton of it last night ;)
Recipe: Spinach-Watermelon Salad

1-2 cups of chopped spinach 
1/2 cup of watermelon cubes
handful of toasted almonds
1/2 cup of corn kernels, cooked
1 cup frozen peas, cooked
1 avocado, cut into chunks
2 tablespoons furikake seasoning

alternative pairings: apple chunks, strawberry slices, craisens, tahini-bbq dressing (recipe to come!)


1. Toss all of the ingredients and serve!

toasted almonds:  ahhh so fragrant  (they've been a recent obsession)

yum yum

now i'm off to eat blended soup and some gluten-free toast (rare treat)
and i'm looking forward to lots of coconut ice cream ;)
