Egg Salad (Healthy and Low-fat)


Recipe: Egg Salad

2 hard boiled eggs, smashed with a fork
1/2 avocado, diced
2 stalks of celery, finely chopped
1-2 scallions, chopped
1 tsp smoked paprika
1 tsp black pepper
(opt) craisens and toasted almonds

1. Toss all of the ingredients together and enjoy ;)




i served mine on top of a flax-oatmeal tortilla (gluten-free & vegan; recipe to come!) and it was the bomb.
