Coconut Macaroons

coconut macaroons are gluten-free!! yay ;) and if they're not
dipped in melted chocolate, they're dairy-free too!

my only issue: they stick to the baking sheet even though I lined it
with wax paper and greased it!
ughhh nothing worse than that. on top of that though,
I was making them for a bake sale and did not feel like wasting even
more time saving them. but i did. of course. and turns out only one person
bought them and i had to give a lot away. they tasted good though. lol i would know
since i ate maybe 20? oops.

i always use unsweetened things, like unsweetened coconut,
but this recipe called for sweetened. for the record,
toasted, sweetened coconut flakes are THE BEST things ever.
it's like ambrosia for the demi-gods in Rick Riordan's The Lightning Thief.

next time i make this, i'll whip up the egg whites themselves until
they form stiff peaks to get more of a meringue-like texture.

so beautiful! yet so difficult to remove from the paper ;(

Chocolate shell sauce: melt 3 tablespoons of butter and 2/3 cup
of chocolate chips

yup they decreased in size because i had to use a spoon
to scoop them out and the edges that spread all stayed on the wax paper.
but, the end does justify the means cause they were delicious.
