Cauliflower Rice "Risotto"

what started off as an attempt to make fried (cauliflower) "rice" turned out to have a texture
that's more similar to risotto...




Recipe: Cauliflower Rice "Risotto"

about 1 cup of cauliflower rice 
frozen green peas/edamame beans, cooked
corn kernels, cooked
1/2 avocado, chopped
1 egg, beaten
splash of pineapple juice

::::::::::::::::::

1. Cook the cauliflower rice in the pineapple juice for about 1 minute and then
add the egg and stir the mixture until the egg coats the "rice". 
2. When the moisture of the mixture decreases (it starts to dry out), add the corn, peas/edamame, 
avocado and mix to incorporate. Remove from the heat and serve.
