Beet Greens Salad

Recipe: Beet Greens Salad

Greens & stems from 1 bunch of beets, washed and chopped
1 beet, steamed and sliced
1/2 an avocado, chopped
1 ear of corn, cooked & cut into kernels
1/2 onion, chopped
1 carrot, diced
(opt) almond slices, to garnish
your desired spices (i used black pepper, smoked paprika, oregano)
oil to sautee with (i used coconut oil)


1. Sautee the onions, carrots, and spices for about 5-7 minutes. 
2. Add in the beet greens & stems and cook until softened (or reaches your desired tenderness)
3. Toss all of the ingredients together and serve.
