Sunday Brunch: Smoked Salmon Scramble



Smoked salmon is definitely one of my favorite foods;
and what's better than having it for Sunday brunch?

A couple weeks ago, after church, I scrambled some eggs and mixed in some
fresh herbs and tossed in some smoked salmon for brunch. And let me tell you,
it was freaking awesome. One problem though: when I mixed in the slices of smoked salmon,
they got partially cooked through just from the heat of the eggs :(
So my tip: when you slice the salmon into strips, slice them into thicker strips and mix them into the eggs
after the eggs cool slightly. Or, just eat them quickly and don't spend three thousand hours
taking photos like me ;)

Recipe: Smoked Salmon Scramble

2 eggs, mixed with 1 tablespoon of water
Some smoked salmon, cut into strips
3 tablespoons of chopped scallions
3 tablespoons of parsley, chopped
black pepper (and salt if you want)
1/2 an avocado, sliced
handful of spinach

1. Scramble the eggs. When they are cooked, stir in the fresh herbs and salmon.
2. Serve on top of a bed of spinach and with the avocados.
