Cauliflower Rice and Onion & Pepper Stir-fry

I've heard so much about "cauliflower rice" but never
bothered to try making it because I've never really liked 
cauliflower. But I had some pre-cut cauliflower in the fridge
and decided to make it since I needed a quick dinner option.

So I tossed the cauliflower florets into my trusty food processor
and sauteed the cauliflower rice for about 3-4 minutes.

Meanwhile, I sliced 1/2 an onion and two sliced baby peppers
and sauteed them in some coconut oil.
Tip about coconut oil: you don't need as much as you think.
The solidified version of coconut oil can be deceptive and you 
can easily overestimate the amount of you really need.
