Vegan, Gluten-Free::Sweet Potato "Chicken" Patty & Nuggets



Here's a great recipe that might trick your carnivorous family 
members and friends into eating their veggies ;)

Recipe: Sweet Potato "Chicken" Patty & Nuggets

2 sweet potatoes, peeled and cut into chunks
4 stalks of celery, chopped
1/2 onion, sliced
1 cup of flax meal
1 tsp oregano
2 tsp black pepper

1. Microwave the sweet potatoes for 8-10 minutes until fork tender
2. Blitz the celery and onion in a food processor and transfer to another bowl.
3. Puree the sweet potatoes in the food processor
4. Mix the sweet potato puree and celery/onion mixture along with the spices
5. If the mixture is too runny, then mix some flax meal in or some oat flour to thicken it up
6. If you're making patties, form a baseball sized ball of the mixture. For nuggets, get about 1-1.5 
tablespoons of the mixture.
7. Roll the mixture in the flax meal to coat the outsides.
8. You can either freeze it now or bake at 425*F for about 10-15 minutes.











Doesn't the chicken patty make it look like a chicken cutlet or some
kind of classic country dinner plate?! 
Although it tastes nothing like chicken, the patty is quite deceptive to the eye ;)
