Vegan, Gluten-Free::Asian Flavors Inspired Spring Salad





ahhhhhhhhhhhhhhhhhhhhhh
my latest obsession has been my homemade Japanese carrot-ginger
salad dressing! It's actually been motivating me to snack on vegetables
more and more and it's low-fat and really healthy :)

I've been eating salads more often too; ditching the almond miso dressing
for this new dressing that's lower in calories ;)

Recipe: Asian Flavors Inspired Spring Salad

                                                                           (serves 2)
                                                                                                                                                                  

1/3 of a cucumber, sliced
1/3 cup of bean sprouts, rinsed and cooked
1.5 cups of lettuce, rinsed and shredded
3 stalks of asparagus, chopped and blanched
1/2 an avocado, diced
1/4 cup of black beans, cooked 
(opt: chopped nuts)

Dressing: Japanese Carrot-Ginger dressing

1. Toss all of the ingredients together.
2. Drizzle on the dressing, mix, and enjoy ;)
