Kale & Cod Salad



Here's what I had for dinner ;)

My mom doesn't cook very often but she (along with my help) made
miso-glazed cod for dinner. She marinated it in the same marinade that
Chef Jon used for his miso glazed cod recipe (https://www.youtube.com/watch?v=xqGOz_JMQUA)
but it was too runny so she threw on some of my leftover almond butter miso dressing

I had in the fridge since it was much thicker.

I had a bed of baby kale mixed greens, my carrot-ginger dressing (http://hannahclaudia.blogspot.com/2014/04/vegan-gluten-free-low-fatjapanese.html?q=carrot+dressing)
on top, and 1/2 an avocado sliced. 






Today felt like a summer day. 80 some degrees, 
the wind is blowing humid air all around, and I'm sitting here watching 
the sunset (and some YouTube videos!) as I eat my dinner. 
AHHHH I can't wait until summer ;)
