Vegan, Gluten-Free::Miso Soup

Miso is so good for you
because it's a fermented food, so it has a lot of great nutrients and beneficial
bacteria for your digestive system.

Here's my go-to recipe for the best miso soup ever!

Recipe: Vegan, Gluten-Free Miso Soup

1/2  block of tofu, cubed
1 green onion, sliced
1 heaping tablespoon of miso paste (make sure it's non-GMO)
3-4 white button mushrooms, sliced
Handful of seafood mushrooms, chopped (or any type of flavorful mushroom)
Handful of dried seaweed
2-3 cups of water


1. Boil the water and stir in the miso paste. 
2. When the soup boils, add the mushrooms.
3. Once the mushrooms are cooked (but still have a bite to them),
add in the seaweed, tofu, and green onions (save some to garnish the soup later).
4. Cook for another 4-5 minutes, or until the tofu has warmed through.

I just picked up these seafood mushrooms at the Asian grocery store;
I tried looking them up to see if they're actually real mushrooms that grow naturally
or if they're a product of biotechnology cause I'd rather eat something that is natural 
and not human-produced, but I can't find anything! So if you've heard of these, let me know
what these things actually are :)

This type of seaweed isn't the same as the roasted seaweed
that is in sushi or that lots of people eat as a snack.
It's a lot crunchier and is more often used in soups.
You can probably find it at any Asian food store.
