Vegan, Gluten-Free: Baked Miso Sweet Potatoes











Recipe: Vegan, Gluten-Free Baked Miso Sweet Potatoes

2 sweet potatoes, sliced very thinly
1 onion, sliced thinly
2 cloves of garlic, minced
a 1 cm thick slice of ginger, minced
1.5 tablespoons of miso paste
2-3 tablespoons of sesame oil

1. Mix the miso, sesame oil, garlic, and ginger.
2. Toss the onions and sweet potatoes in the miso dressing.
3. Bake at 375*F for about 20-30 minutes, or until the sweet potatoes 
are fork tender. I like to wrap about 1 cup portions in some foil
so the sweet potatoes aren't "crispy" like fries but are softer and more tender :)

(you can also premake these and let them marinate in the fridge. pop 'em into the oven whenever you're hungry!)
