Portable Salad and Homemade Peanut Sauce::My Vegan Twist on Vietnamese Spring Rolls


YUM YUM YUM YUM YUM :D

Vietnamese spring rolls are so delicious and they're gluten-free!!
Instead of adding seafood and rice noodles (vermicelli), I literally just
wrap these rice papers around a simple salad for a vegan dish. 
(Sorry, the photo doesn't represent a vegan meal since there's egg, but
the spring rolls are!) 
My twist is craisens ;) They're super sweet, chewy, and add an
interesting flavor to the spring rolls ;)
My favorite part about eating spring rolls is the peanut dipping sauce.
I'm a total peanut-butter junkie, and it's awesome to be able to 
make such a simple sauce on your own ---you not only save yourself
from having to pay a ridiculous amount of money for such a simple sauce
but you also save yourself from putting a ton of preservatives and nasty chemicals
into your body! 




Recipe: Peanut Dipping Sauce

1 tablespoon of your favorite peanut butter (i love chunky)
1 tablespoon of sesame oil
1 tablespoon of soysauce
1 tablespoon of warm water

1. Mix the water and peanut butter until blended.
2. Mix in the other ingredients, and your done! 
How easy was that? ;)


Recipe: Vietnamese Spring Roll

Rice Paper spring roll sheets
Shredded lettuce
Craisens
Almond slices
Avocado slices

1. Toss the ingredients except for the spring roll sheets together in a bowl.
2. Dip the spring roll sheets in some warm water until they're softened.
3. Place a small amount of the salad in the spring roll (and even a little bit of the sauce if you want), 
wrap it up, and ENJOY :)



I think this is my favorite, go-to, low calorie recipe!
It's suitable to eat for lunch, snack, dinner, whenever, and 
I hope you'll enjoy it as much as I do!
