Healthy Valentine's Day Recipe::Vegan, Gluten-Free Banana Dibs

Have you ever tried "Dibs" ice cream? 
They're like bite-sized Klondike bars with the hard chocolate shell!

Now while Dibs are chock full of cream, sugar, dairy, and guilt,
these vegan, gluten-free banana dibs aren't ;)

They're incredibly easy to make and they taste best after only being in the 
freezer for 30 minutes, so you really don't have to wait very long to enjoy these babies.
If you really can't wait, go ahead and use the vegan chocolate sauce as 
a chocolate dip and you can have a chocolate fondue ;)

Recipe: Vegan, Gluten-Free Banana Dibs

1/4 cup of unsweetened cocoa powder, sifted
1/8 cup of pure maple syrup (if you like things really sweet, go for 1/4 cup 
but personally, it's not necessary to add that much)
1/4 cup of coconut oil
1 banana
Some hot water to help melt the coconut oil

1. Pour hot water into a large bowl and place a smaller bowl inside the water to create
a "double-boiler". Place the coconut oil in the smaller bowl to melt it.
2. While the coconut oil melts, slice the banana into coins. 
3. When the coconut oil has melted, stir in the cocoa powder and maple syrup.
4. Dip the banana slices in the chocolate syrup and place them on a cookie sheet
covered with (ungreased) wax paper. If you have any excess chocolate syrup,
pour the rest onto another container and freeze to make vegan fudge!
5. Freeze the bananas; they taste best after 30 minutes but keep them in the freezer
until you're ready to eat. 

Alternative Step: If you want to get creative,
you can freeze the banana slices ahead of time. Once they're
frozen, stick the slices into a food processor and process them
until you get a soft-serve ice cream consistency. Spoon out the 
ice cream into tablespoon lumps and freeze them for another 30 minutes.
Once they've frozen, take them out and then dip them in the chocolate.

These taste incredible and they're definitely guilt-free ;)
