Simple Stuffed Peppers in 15 minutes

Don't these look divine?
They taste AMAZING
and took me under 15 minutes to make!
It's a great way to use up any leftovers in your fridge
or sneak in those vegetables ;)


1 bell pepper, sliced into thirds
Chopped broccoli
Sun dried tomatoes
Hard boiled egg
Shredded mozzarella cheese
White/brown rice

*the measurements are not exact, you can add
as much or as little of these ingredients to your liking


1. Combine all the ingredients in a large bowl
2. Stuff the peppers with the rice/vegetable/egg/cheese mixture
3. Sprinkle some more mozzarella cheese on top and add 
a bit of black pepper
4. Broil peppers under a broiler on "HIGH" for roughly about
five minutes. Keep an eye on them; take the peppers out 
of the oven when the cheese has completely melted. Enjoy!
