Pumpkin Mushroom Orzo

Gather 'round ladies and gents, cause here's an incredible
vegetarian recipe that's great for lunch and dinner. This recipe is
very simple and can easily be changed, so if
one of the ingrdients is missing, you can just substitute it with
whatever you like. The measurements don't
really matter that much; this recipe is just a new combination that I 
came up with and L♥VE :). 
So let's get started:

(Serves 2 people)

6 Mushrooms ( I used white button mushrooms)
Fresh, cooked pumpkin (as much or as little as you want, I used 2 ladles)
1.5 cups of Orzo pasta
Mozzarella Cheese
Olive Oil (or any healthy oil)
Salt and Pepper to taste

  1. Boil some water and cook the orzo for 10-12 minutes.
  2. Meanwhile, sautee the sliced mushrooms and add some salt and pepper to taste.
  3. Drain the orzo, stir in the mushrooms.
  4. Add as many ladles full of pumpkin (or pumpkin puree) to the orzo as you want.
  5. Mix in as much mozzarella cheese as you would like
  6. ENJOY :)))
